Once made with the gooey extract of the marsh-mallow plant, this delectable confection was prescribed by 19th century physicians as a cure for sore throats. Modern ‘mallows no longer come from the marsh, and we enjoy these soft, sweet pillows of indulgent sweetness as treats rather than curatives.

The Seven Deadly Sins (Plus One) collection includes …

PRIDE:   The Bible says that “Pride goeth before destruction, and a haughty spirit before a fall.” We just like to think of it as healthy self-esteem. Our Pride truffle combines Chambord raspberry liqueur with super-dark chocolate ganache, and then bursts with the surprise of a juicy, tart black raspberry in the center.

ENVY:   It doesn’t matter who you are – there’s always going to be someone who’s smarter than you, richer than you, and better looking than you. We honor the green-eyed monster with a key-lime flavored white chocolate ganache truffle, enhanced with the hot, sweet chewiness of candied ginger.

LUST:   The poet Sylvia Plath once observed, “If they substituted the word ‘Lust’ for ‘Love’ in the popular songs it would come nearer the truth.” So how can lust be so bad? Our wickedly scrumptious Lust truffle combines the essence of pomegranate (thought to be the true fruit with which Eve tempted Adam) and sweet-tart dried Bing cherries.

SLOTH:  Is it really a sin to spend the entire weekend in your pajamas, reading trashy magazines and watching old movies on TV? Who among us could cast the first stone from that great collective glass house? We pay tribute to this most popular of sins by swirling rum-infused ganache with creamy peanut butter, enrobed in rich milk chocolate.

GREED:   In the movie Wall Street, stock broker Gordon Gekko pronounced, “Greed is good.” We’ll go further than that – greed is positively delicious. Our combination dark/milk chocolate ganache is studded with Valrhona cocoa nibs, spiked with chocolate liqueur, then enrobed in even more chocolate. Because too much is never enough.

GLUTTONY:   Who are we to call overindulgence a sin? For the Gluttony truffle, we add crunchy Heath toffee bits to our rich chocolate ganache, then dip the whole thing in even more Guittard milk chocolate. Oh, and we sprinkle additional toffee bits on top. Of course.

WRATH:   Rage, rage against the dying of the light … and your boss, the cable company, drivers who don’t know how to merge, or anything else that annoys you. Because anger is passion, and passion is magnificent. Our Wrath truffle burns with the delectable intensity of three different chiles, clove, cinnamon and ginger. Spicy, but you can take it.

TRUFFALDINO:   Inspired by Prokofiev’s 1919 opera The Love of Three Oranges, our Truffaldino combines dark chocolate with Grand Marnier, orange oil and candied orange peel. What’s that? You don’t like opera? Well, it’s still delicious. Arancio di amore!

One stormy summer weekend in 1816, a group of English expatriates stayed at a Swiss villa on the shores of Lake Geneva. Fueled by wine and opium, they devised an entertainment for themselves — a competition to write the best ghost story. Ironically, it was the two writers of the group, Percy Bysse Shelley and Lord Byron, who fell short at the task. But 19-year-old Mary Godwin (later to become Mary Shelley) began her classic horror tale Frankenstein that weekend, and Byron’s physician, Dr. John Polidori, penned the beginnings of what would become The Vampyre, credited as the first modern vampire story.

Percy Shelley:  A radical, an athiest and a skeptic, “Mad Shelley” led an unconventional life, died far too young, and left a body of work that went unappreciated for a generation after his death. Our Shelley truffle is an effete blend of white chocolate, lemon and almonds, dipped in dark chocolate for a bit of masculine bite.

Lord Byron:   Described by a lover as “mad, bad, and dangerous to know,” Byron’s life was considered scandalous due to a failed marriage and many high profile affairs, including one with his own half-sister. The flavor of decadence is evoked in the Byron truffle, with tawny port and a hint of smoke infusing super-dark chocolate.

Dr. John Polidori:   The son of Italian immigrants, Polidori was an accomplished physician and a depressive personality, plagued by debt and not even credited with writing The Vampyre, which was published without his permission and attributed to Byron. We note Polidori’s ancestry by lacing dark ganache with Amaretto and pistachios, for a more uplifting experience.

Mary Godwin:   Created from scavenged parts and reanimated with a jolt of electricity, Dr. Frankenstein’s monster was not the work of beauty he had imagined but, instead, “a thing such as even Dante could not have conceived.” We attempt a more delicious experiment, taking our combination dark/milk ganache and adding currants, pecans and candied orange peel, then bringing it to life with a bracing bolt of white rum.
